Preparing an All-Veggie Feast

Feasts are meant to please those who will gather around the table. But, most of the time, in their quest for pleasing the guest’s senses, they are bound to prepare food that’s not too good for the health when eaten too much. If you are hosting a family dinner or a friendly get-together in the near future, try our guideline on putting together an all-veggie feast for a healthier change. You would not regret it, it’s as eye-pleasing and as tasty as roast pork and sizzling T-bone steak.

Soup: Apple & Celeriac Soup

For starters, you can prepare this heart soup made from apples, celeriac, thyme, celery, and crème fraiche. You simply need to heat the ingredients in olive oil until the celeriac is tender. Afterwards, you need to blend the soup until smooth. Top the soup with fried sage leaves, toasted hazelnuts, and grated horseradish.

Appetizer: Squash, Stilton & Walnut Rolls

Instead of sausage-filled rolls, you will fill the puff pastry with roasted butternut squash, Stilton, and walnuts spiced up with thyme. This dish is very easy to make and will only require about 35 minutes to bake.

Main Dish: Spiced Veggie Rice with Poached Eggs

Now, for the main dish, you need to prepare something really special and this colorful number would not disappoint. First, you need to prepare the ingredients, which include:

8 stalks green onions

2 cloves garlic

2 red chilis

olive oil

2 pieces fresh bay leaves

4 cardamom pods

3 tsp coriander seeds

1 tsp turmeric

300 grams basmati rice

400 grams leftover veggies (beetroots, potatoes, parsnips)

6 pieces free-range eggs

200 grams green, leafy veggies (brussels, spinach, sprouts)

a bunch of flat-leaf parsley

a bunch of mint

1 pomegranate

2 limes

First, preheat your oven to 180 degree Celsius.

Then, heat some olive oil in an ovenproof pan over low heat and place the garlic, spring onions and bay leaves. Cook for about 10 minutes or until the spring onions are soft.

Next, use the mortar and pestle to bash the cardamom pods and coriander seeds. Place them onto the pan and throw in the cumin, ground turmeric, and chillis. Season with some salt and then, stir the ingredients for about 4 minutes over medium heat.

Increase the heat before adding the rice and a little bit more oil. Mix the ingredients until well blended before adding 800ml water. You need to coat the rice with water and make it about a centimeter above.

Put on the lid onto the pan and place it into the oven. While the rice is cooking for 25 minutes, heat the veggies in a tray, then poach the eggs. Stir them all together once the rice is done.
